Also many lunch bags and boxes on saleWe have learned over the years the value and need for using a vacuum sealer. We use to use Ziploc freezer bags to freeze alot of our produce. Don't get me wrong, even though they are good, after so long, we were loosing some of our food to freezer burn. We found ourselves throwing out hard earned money from grocery store items and hard work from our garden produce.
Fast forward to years later, we learned about vacuum Sealers. We bought our first vacuum sealer and haven't looked back. After using it so much and so many years, we wore it out and had to get another. We upgraded to a small commercial one since we do big heavy meats too. We have not looked back.
It has saved us so much money and it has well paid for itself.
I have had so many people inquire about our vacuum sealer that we use and how it works that I just said I needed to make a video, so I did.
We use ours for meats, garden produce, items from the grocery store and to use on our souis vide. The bags you use are microwaveable to steam in, boil in etc. You can even wash and reuse. Except for something that might be greasy or raw chicken.

I did it again y'all. I made another one of my grandchildrens favorite things. Pickled Okra.
I also saved a bunch for us for the freezer for frying. They have already ate one jar. Lol 😆
Directions:
Wash okra. The ones for the freezer got chopped up and placed in vacuum seal bags and put in freezer.
For the Pickled Ones, I picked out small size ones and placed into jars. I used Ms. Wages Dill Seasoning Pack. I followed the directions on the package. She has the closest flavor as to the ones in the store and that's what I was looking for since I needed them to be kid friendly. When dealing with kids, don't fix it if it's not broke. They are loving them and we are enjoying our fried okra.

Neat idea. You can freeze left over heavy cream in an ice cube tray and then pop them out and put into ziploc bag and take out as many as needed later to put in a recipe.

We are in middle of our growing season and still going strong. We are getting exhausted and cranky sometimes but we are being blessed. I made this little clip

Welcome to our jungle where corn is taller than us, okra is over our heads, squash and Zucchini is up to our waists and the green bean vines are sucking us in but we are so blessed.
I tried an experiment using surplus Zucchini. I found another way to put our Zucchini to use and have a little extra treat on hand.
I made Mock Pineapple with just a few simple ingredients.
This is a way to use up some surplus Zucchini you have and to use when some of them get so big. 😉 Also, you have something extra on hand to make meals and desserts out of. So many uses from one vegetable, it is amazing.
So I took a couple of Zucchini that was big and peeled the skins off then sliced in half lengthwise. I scooped all the seeds out. Then I cubed the flesh. I raw packed into jars and just covered with pineapple juice and some brown sugar. Debubbled, wiped the rims of the jars off, placed lids and rings on fingertip tight and processed in water bath for about 8 to 10 minutes because I did not want them to turn mooshy. It was long enough to seal all the jars.

It is the time of year when everyone is working in their gardens in the heat. Please be careful and stay hydrated, wet your clothes with some water to stay cool, mist your face with some water or a bandana.
Know your limits and stop BEFORE you get light headed, dizzy or nauseous. Trust me, I know. The best time to pick is early morning before the heat sets in and late evening when the sun is least hot. Please take caution. Stay safe and Happy Gardening
We are doing great with Corn harvest this year.
We have a process that we use and it goes so fast for us.
Below are two videos, one from a few years ago and an updated one. After several years of putting up corn, we finally found what was right for us and easier. I hope this helps someone.
The past few days we have been in the corn.
Just a couple of farm girls shucking corn with Poppie. Atleigh said that was her favorite part. 😍 Atleigh said she asked God to help her not be scared of the bees that were flying around (pollinating). Then I had the best helpers washing and silking. We worked quick together. Now that the work is all done, we get to play the rest of the day. So, painting rocks again it is.
Lunch time:
Lunches of champions. Everything from the lettuce from the Aerogarden. The rest came from our outdoor garden. Except the chicken nuggets.Hey, pick your battles with kids.
After nap time it was cloudy so we didn't get to swim again but we still had smores.
I absolutely love our table top fire pit.
The guys tried to draw blood from the cows to test for pregnancy but to no avail. So got scheduled for someone to come help draw it.
The next day we had corn to do again.
Another productive day. Ag and Poppie picked and shucked corn again, me and Caroline cut zucchini and bagged some and Pickling the rest. Then we washed and bagged the corn cleaned up and mopped the floor all before 9:30 am. Things go faster on Team Dixon.
They played while I finished water bathing the jars of Zucchini pickles.
Then it was much needed nap.
After nap we had a little car wash and let them wash their power wheels and then a dip in the pool.
The next day was a break from the garden, we needed a fun day. We grabbed our granny on the way and took the girls to town to spend their chore money. Then we took them to Chuck E Cheese.
Today is a relaxing day for me and dear hubby and we are going to enjoy it. This ole gal needs a nap.
