Proud Parents

We got a text a few days ago from our youngest

We are very proud of him.

A quick recipe:

If you like cheesesticks but are diabetic or on a keto diet. I have a recipe and will post below. They are really pliable to hold up during dipping in marinara sauce.

They pair really well with chicken parmesean. And they are yummy. 😋

Holiday Tip

I am not one to start decorating or anything before Halloween but I do have a valuable tip. DO NOT, I REPEAT, DO NOT WAIT UNTIL 2 WEEKS BEFORE CHRISTMAS TO START CHRISTMAS SHOPPING. Instead, you can start now putting aside a little money each paycheck and save it for Christmas. Or, starting now, you can buy one or two gifts a a paycheck and before you know it, you will have all your shopping done. A better idea, starting in January of next year, put back money each paycheck. Over a years time, you will have what you need for Christmas shopping. I know people love to wait until Black Friday to do their shopping, and think they are getting amazing deals. In all honesty, if you shop sales through out the year, you will get good sales. Sometimes, they mark up things and then put it on special so you will think it is a great deal. Compare sale prices through the year to Black Friday Specials sometimes. You'll see.

Stress robs people from enjoying the holidays. Don't let it rob you.

A Day of Relaxation

Supper is in the crock pot but my back side is lounged right here in this chair getting some water and sun therapy. FINALLY! I am hanging onto summer like grabbing a tiger by the tail.

And for the record, I am a Princess. Since I have been here, animals have come to check me out or literally as these guys, swam with me. I kid you not. I headed to the water and told them to come on and they got in and swam with me. However, it was rude of them to eat from my hand but not let me pet them. 😤 It's cool though. 😎 Just call me Snow White, Sleeping Beauty, Aerial, or whatever. 👑👑👑👑👑👑

David is not a big fan of soup but I have been craving broccoli and cheese soup for over a week and he let me satisfy my pallet tonight. Added bonus was the Cheddar biscuits. They are actually keto and diabetic friendly and are just like Red Lobster Cheddar Biscuits. I will put the link down below for the recipe on Pintrest. I have attached a pic of the labels to see the carbs.

Packing Lunches

My adult lunch for a day at the Lake. I love Bentgo boxes as well as the next, but not the prices. Yes, I see posts about them at Walmart. However, our local Walmarts do not have this special at the time. If they run it any time soon, I will purchase some. Right now, I just want to show you that lunch box accessories do not have to break the budget.

I have included pics to show examples of the different compartments and how they can be removed for bigger items or smaller items and how it functions together. You can create more compartments by adding cupcake liners in any of the big sections top or bottom. The small container with lid is perfect for sauces or butters and will not leak. Little hands can operate these boxes as well. I have two grandchildren that can open theirs with no problems and they have used them for two years now. They were 3 and 4 when I bought them. Also, other little containers such as the one I have trail mix and cheese in, and the empty one (just for post purpose), were purchased at Dollar Tree for a $1 each.  They can hold veggies with their dips or fruits, yogurt and granola. The possibilities are endless. The little fork, spoon and knife kit came from Walmart for $4. Water bottle which will be filled when time to go was just a $1 at the Dollar Tree and it holds up in the dishwasher (top rack away from heat element) nicely.

I love how it all goes back together and snaps nicely and securely. Even if placed on its side, it packs very well. I paid $10 for the Sistema box at Walmart. Bentgo is the name brand. However the idea came from  Bento lunches that is used in Japan. Bento is an organized lunch preparation that is used by the Japanse in their school systems for children. It contains an item from all food groups.  It is also an organized container that they use to hold their lunches when outside of the home. Research Japanese Bento Lunches.

New Videos and Relaxing

Well, I have been relaxing and enjoying the view out here everyday. I have discovered that deer eat peoples plants down to a nub out here as well as back home so I don't feel so bad. 😕 😉🤣

I have been pampering myself too.

If you don't have a Gel Dip Powder kit in your life, you need one. This is only my second time lots of trail and error, but each time has lasted me 3 weeks or 3 1/2 weeks each. I paired two kits together. $28 and $18 off of Amazon and it will last me over a year. Each kit will give over 25 manicures. The big one with all the colors will give well over 50 manicures. Figure the math versus one manicure.

Here is another I paired with it

Every morning me and dear hubby enjoy our coffee outside under the porch. It is very nice. We are getting ideas for us one. It is great listening to the pouring down rain sometimes too which happened a few mornings.

I have also worked hard the past week getting two new videos up on our channel. I've had so many people waiting on these.

This video is packed full of information on how we preserve alot of our food. I give quick start tips to Canning, Water Bathing, and freezing. I explain the pros and cons of Canning versus freezing and how to know which one you want to use. This is the first video of a series to my Canning videos that I've had so many requests for and people waiting on. Click on the pic to watch.

Also this one:

This is how I can our potatoes and I love them. They are easy to do even if you are a beginner and want to learn to start Canning. You don't always have to grow a garden to preserve food. Check out our latest video by clicking on the pic.

I hope you enjoy them and can use the info and maybe try your hand at beginning to can your own food. More videos to come but I'm going to take the next few days to relax and rest.

Grandparents Day

Today is Grandparents Day so I dedicate this post to my grandparents Bennie and Dorothy Oliver. I would love to sit down and talk and visit with them again. They raised three kids of their own that love the Lord and raised families of their own to love the Lord too. I spent so many years practically living with them when I could. They helped mold and shape my life and I always knew I wanted to be just like my grandmother. My momma says I am just that. I cherish the years of watching and hearing my PaPa preach behind the pulpit while my MaMa sat proudly watching him too with her eyes just shining. They loved each other til death did they part. I miss them very much and will see them again someday.

I celebration of Grandparents Day Today, we are so thankful to be Poppie and Gmaw to these two and more to come in the future. There is nothing like a bond between grand child and Grandparent and we have such bonds that can't be broken. There is nothing we want do for them.

New Destination

Well, we reached our next destination for a little while. It took us 2 days to get here. I can't travel that far in one day and dear hubby took it easy on me so we broke it up in two days. The scenery was awesome. We went past the Smoky Mountains which is one of my favorite places since childhood.

The day we arrived, we were so exhausted and still had to unload our vehicles. We went to bed that night and just passed out.

The next day, I got our house set up and just walked around looking.

Let's just say I'm in love.

I have so many places to relax and enjoy, I don't know where to start first.

Ya'll had y'alls fun all summer and Ya'll just go on back to school tomorrow. Now it's my time to shine . 🌈🌞🏝🏖🏊‍♀️

Nothing like a fresh pedicure on the pier.

Got work to do,but at least I have a good view. 👍

When you don't drink, You can work at a tiki bar too. Got new videos coming up that people have waited on forever. 😏

I am working very hard on getting my canning and Preserving videos edited to upload to our channel.  I have so many subscribers waiting for these.

I am trying to vacation and get a little work done too. ✔️

Today was my Momma and Daddys 37th wedding anniversary.

When it's partly cloudy outside, you just utilize the jacuzzi. ☺️

Dear hubby was off for a few days so we just enjoyed or time.

Morning coffee outside

We had a date day and went to Richmond and ate and shopped a little.

The next day, we cooked out and watched football all day.

I missed my AL team playing because we couldn't figure out how to stream it on this TV but we figured it out later and watched our second team TN. Yes, I am the Roll Tide fan and my guys are TN. I'm outnumbered.

The next day we were lazy again.

It turned out to be a great week.

I am working on several videos to get uploaded to our channel. Stay tuned.

Recipe and Tying Up Loose Ends

Well, we have had a great month of August but dear hubby has got to go to work again. 😢.  It seems like we just got home. We knew we had a month to spend with family,  and work on our kitchen. It went by way too fast. We have our kitchen unpacked and set back right and organized except two pantry cabinets still left to get. I can shift things around later when we get those. We've got most all our doors changed out and up. Little things like finishing trim, one more door and applying all handles and knobs on cabinets and drawers can wait until later. It is looking so good and I couldn't be more proud of my husband for his accomplishments and hard work. Also our handy man.

I would like to share a good meal with you too. I was so proud of this meal and it was so economical and cost friendly.

I used alot of things I had on hand and left over.

First, I had some left over egg roll wraps that I wanted to make spring rolls or egg rolls with. I used a jar of my home canned saurkraut from a few years back. It did not get as sour as I had liked when I canned it,  so I knew it would work perfect for these. I toned it down a little more with some sesame oil and soy sauce. I sauted it and threw in some shredded Zucchini we grew a few years ago and I had in the freezer.

I wrapped them up, spritzed with olive oil and air fried. You can deep fry them if you'd like but I needed my deep fryer for our chicken.

Next came the chicken. I was out of chicken breasts which is what I usually use so I improvised and pulled out some thighs that we bought in bulk on sale and repackaged into smaller portions and vacuum sealed. I made my own sauce with some sugar free sauces that dear hubby could enjoy. I deep fried them just a little to get that crispy battered coating. Then I transferred them to the airfryer where I basted the sauce on and finished cooking.

Then came the cauliflower fried rice. Now, here is where it got price tricky. Normally, I buy a head of cauliflower and cut and mince it up. But they were $2.74 a head. So I went to the freezer section and the rice cauliflower in a bag was $2.24. Just two rows over was a bag of cauliflower florets for $1.00 so I snatched that and moved on. Be sure to compare prices on the different ways you can purchase and prepare things. That was a perfect example. Now, I take that bag and mince it up more to get my "rice" effect. It is healthier for dear hubby because he can't eat rice. I sautéed it in some sesame oil and soy sauce and added fresh frozen peas that was in my freezer and I know I only paid $1.00 for that bag too a while back.

Then came our Ginger Salads. We always get one with our meals when we go get Chinese food. I usually make my own ginger dressing but this time I splurged and just got a bottle of dressing. I probably want do that again. We didn't care as much but it was ok. I will make a batch next time and have on hand. I get the recipes off Pinterest.  The bottle will do in a pinch.

Last is the vegetable stir fry. 😋 I grabbed a bag of vegetables from the freezer section also that was $1.00. Sautéed that in some stir fry sauce I had on hand. And there you go. This meal was less than $11 to make considering I had alot on hand but I averaged the meal cost of those items in too.

I wish I would have videod this and put on my channel but we had been working all day and was so exhausted I just didn't feel good. 😪  I barely made it to the end of the meal because my feet and legs were killing me. 😩

I hope yall enjoyed this recipe and try it out. 😋
