It is that time of year when the farmers are digging those sweet potatoes and grocery stores are running then on sale right now for all this holiday baking. When you go to the store, just grab extra while they are on sale and bring the home. Use some for your baking, but the rest I can show you how to preserve them so you will have more on hand for a later use. You can put sweet potato puree in anything like breads, muffins, pies, waffles, pancakes, souffle's, etc. You can enjoy this root vegetable any time of the year. It is also keto and diabetic friendly and a great substitute to regular potatoes.
