As I get older, I love challenges. If something catches my eye or fills my mind, I do whatever I can to research and learn that thing that so intrigues me. There are so many things I love to do around St. Patrick's Day. We love to make all things rainbow. If you are looking for something fun to do with the kids and get them in the kitchen, pancakes are one of those fun things. Not to mention, you are breakfast prepping for a few days. You can take this one step further and double or triple the recipe and make some freezer breakfasts for a week or more. Talk about killing 2 birds with one stone. You are also teaching. Kids learn a little science, chemistry, geometry, life skills, home economics, and so much more. More importantly, you are spending quality time with your kids and making memories. Isn't that what it's all about?
Our pancakes serve double duty. Not only do we make them around St. Patrick's Day, we also make them anytime of the year and use them for so many things. For instance, winter time is blue pancakes, and we pretend they're Elsa pancakes. We use green for St. Patrick's Day for leprechauns or Christmas for Grinch pancakes. Red can be for Valentine's Day and Christmas. Yellow and orange, we have turned into Easter, flowers for summer, or Moana. Purple is also Easter, or maybe unicorns. It's all about creativity. We have also done a Troll's theme. We do top them with whipped cream and sprinkles, but I do make them as nutritious as I can. I have snuck sweet potatoes, pumpkin, or butternut squash into my pancakes. They never knew. I can also incorporate different flours as well. Whole grains milled into fresh flour, whole wheat, and oat flour. If you do not want to use the food coloring from the grocery store, by all means, you can incorporate plant powder like beet root for red, lavender for purple, etc.
The point is mostly having fun. Turning ordinary pancakes into rainbow pancakes is so easy. After you mix your batter together, separate the batter evenly between 6 bowls. Mix in drops of each food color; you can make them as bold or less according to your preference. Remember that red and yellow make orange, red and blue make purple. The rest are easy peasy. Then, proceed to making your pancakes as you normally would. The key to remember is lower heat, so they don't turn too brown on the tops. Sometimes that's tricky but doable.
I'm also teaching my grandkids to cook, so I pretty much just assisted.

The trick to rainbow bread is making your bread dough as you normally would, and then divide your dough into 6 different balls of dough. Place each ball of dough into the mixer and use drops of food coloring at a time. Let the mixer knead the dough until the color is evenly distributed and there are no white spots of dough visible. Take out and roll the dough ball out into a one-inch thick rectangle. While you are rolling each dough ball out, place the next dough ball into the mixer and let it knead while you are making your rectangles. You may have to work a little quick before the dough starts rising. You need to make it through all 6 layers. As you roll out each rectangle, place the flat dough onto the top of the previous dough rectangle. By the end, you should have 6 sheets of dough stacked on top of each other. Make sure each sheet is the same size all the way around. Starting at the end of the rectangle, start rolling the dough into itself away from you, like rolling up cinnamon rolls. When you reach the end, turn it over and pinch the seam shut and close the ends. Place into a greased loaf pan or parchment paper-lined pan, and let proof until doubled in size. Finish baking according to your recipe instructions.
We have made so many rainbow things over the years, and it never gets old; we just keep getting more creative.
