Quick Refrigerator Pickled Vegetables

  


Hello Friends. Welcome. Come sit with me a spell as I tell you how I make some quick pickled vegetables sometimes. 

I have discovered a love for pickled vegetables. I can pickle some vegetables using Ms. Wages' Kosher Dill Seasoning Packets because they are my grandkids' favorites. They love dill pickle flavor, and it is another way for me to sneak some vegetables in them. Not to mention, I use them for snacks frequently and as a quick side with some chicken nuggets. Hey, it's all about compromise sometimes with kids.

Another way I love to pickle vegetables is a quick refrigerator pickle method. It has a sweeter, different brine. Grandkids do not like this one as much. 

First, I start by slicing all my onions up with my mandoline slicer. If I am doing a small batch, like one jar or two, I just use a knife. 






I like them pretty thick for sandwiches, pizzas, or just a side to a meal. 



I will get my brine ready by boiling 2 cups of white vinegar, 2 cups of water, 1/3 cup of sugar ( I use Stevia), 2 teaspoons of sea salt or pink Himalayan salt, 2 garlic cloves (optional), and 1 teaspoon of peppercorns (you can even use the mixed peppercorns if you like). Bring this to a boil and remove from the heat. This will fill about two quart jars. 



Ladle the brine into your jars up to the neck, leaving a one-inch headspace. 



Make sure to de-bubble your jar to remove all air pockets or bubbles. 

Place your lid on your jar, and let it cool completely before putting it into the refrigerator. You have just made quick refrigerator pickled onions. 

Now, if you want to make a batch, you will need to double or triple your brine recipe. The rest of the jars will need to be processed for shelf life. You may not have room for all these jars in your refrigerator. 
You will wipe the rims of your jars with a paper towel or cloth. Place lids and rings on fingertip-tight. Process in a water bath canner for 10 to 15 minutes. Remove from the canner and set aside on a counter to cool and seal. Place in your pantry until ready to use. So Simple.



I also grow and pickle banana peppers this way. Great with sandwiches or on top of homemade pizzas. Just repeat the same process. 



Save those onion peels because you can make onion powder out of them. 
Spread all your onion peels into a baking sheet and dry in the dryer on about 3oo degrees, just enough to get them dry and kind of dehydrated. Crispy. Then place into a blender, food processor, or coffee grinder and grind until a fine powder. Put into an air-tight container and store in your pantry. You now have onion powder on hand, and you didn't have to go buy it. 




I also experimented with making a bread and butter quick refrigerator pickle. Since I use zucchini in my pickle making (we have a big surplus of these every year from the garden), I just cut up one big zucchini and filled my jar. I made the same brine as for the onions, but I added one extra ingredient. I added two tablespoons of McCormick Pickling Spices. Just look at those spices. This kicked these pickles up a notch. After I got them made, I put them into the refrigerator. These turned out awesome. Now, even when we are on a work trip, I can whip up a jar of each one of these and use them. I can also turn the pickles into relish by running a small amount in a mini food processor. Great in egg salad and deviled eggs.

How To Make Your Own Eye Drops

 


Welcome Friend. I hope you are all doing well.

I hope you find today's post very helpful and useful. 

My eyes tend to get very dry sometimes, and you know the optometrist will always suggest lubricating eye drops. But the price of just less than one ounce is ridiculous. 
I started looking into the ingredients that make up the name-brand eye drops. 

Did you know that lubricating eye drops are made up of saline and oil? Saline is for hydration, and oil is used for lubrication. 
That's it. That's all.
So I started digging a little deeper and discovered that with just a little wisdom, you could make your own.

Disclaimer: This is my own research and what I do for myself. If you are in question, by all means discuss this with your optometrist or doctor. 

Through my research, you can use a mild saline solution that is already gentle and available. 


First, save an old eye drop bottle after you use it all up so you will have one that you can reuse. It already has the little cone-shaped tip applicator that you will need. 


Then you will need to find a saline solution that is premade and gentle. We all know that you don't want a strong saline solution, such as one you might use to clear nasal passages. You want gentle because this will be going into your eyes. You do not want it to burn. I chose to use Little Remedies Saline Spray or drops for this. Now, this one is normally used on babies' nasal passages, but I chose it because it is already gentle since it is used on babies. So I did use this one. You could possibly create your own saline solution, but there are a lot of things to take into consideration. You will have to sterilize the water and make sure you use the right amount of salt, boil it, and cool it down. I do not know the correct ratio of salt to water for that. That's why I'm going with this.



Next, you will need a lubricating oil. Most companies use mineral oil, but I know all the benefits of castor oil, and one of them is that they are great for the eyes. 


This solution is so easy to mix. To your recycled eye drop bottle, add only one to two drops of castor oil, or you can use mineral oil if you like. You do not want it thick, and it depends on how big your bottle is. Be very careful not to get too much. 




Next, you will add your saline solution. I did not measure; I just eyeballed it. Even though this formula is already gentle, I only used a little so it will not burn my eyes. So again, use good judgment. 


After the first application, if you see that it is too strong, you can add a tiny bit more sterile water to dilute it. Use as you would eye drops. 

This has helped my eyes, and it is never harsh. I also make a little bigger batch and have it on hand to refill my bottle when I run out. This has saved me a lot of money.

Fall Candy Apple Ideas


 

Hello Friends, and Welcome to today's post.

Falls season is in full swing, and that means apples, pumpkins, and butternut squash. 

All the fall festivals are going and there is just something about candy apples. But sometimes trying to bite into a big caramel-coated apple is quite hard, especially for little children. Below are a few easy ideas to help little ones eat them better and enjoy their goodness. The best part is, they can even dip and decorate their own. How fun would that be? 


You can display all the apples and fixings in so many different ways. 


They are perfect on skewers, so they are less messy and better for little hands.



For pumpkins, have you grown any pumpkins or butternut squash in your garden, or bought some from a pumpkin patch, and you really don't know what to do with them?  I can help. 

We grow both, and we preserve them in 5 different ways. We don't let them go to waste. Even ones that you have used to decorate outside with or paint.

Two Sides To Complete Any Meal

 


Hello Friends and Welcome!

Today I am going to show you two sides that you can make to complete any meal and prepare alongside a meat for a complete, nutritious meal for you and your family. 

The two wonderful sides are glazed roasted carrots and roasted cauliflower. 

My Dear Hubby loves glazed carrots simmered in brown sugar and butter. Yummy!!! You can use baby carrots if you like, normally I do, but I just so happened to have these left over from a previous meal. 

I started by peeling and cutting the carrots into strips, kind of like french fries. 



After preparing the carrots, I placed them into a pot and added water to cover. 




Since the cauliflower needs to be boiled, I got it prepared at the same time. I took all the outside leaves off of the cauliflower, washed and cut off the florets. 


I placed them into a pot as well, alongside the pot of carrots, and brought both to a boil. You just want to par-boil them enough so that they are not mushy but not hard. 


While they are boiling, grease two lined baking sheets with olive oil. 


Then I will prepare my seasoning for both vegetables. For the carrots, I melt butter and add brown sugar and a pinch of cinnamon, and set that aside. For the cauliflower, I melt butter and add Old Bay seasoning, salt, pepper, Italian Seasoning, and anything else I may just want to throw in there. 


After parboiling the vegetables, strain and spread onto your greased and lined baking pans. 


Preheat your oven to 400 degrees. Baste your butter and seasonings onto the vegetables. 


Bake until they are golden brown and bubbly. Since they are parboiled, this shouldn't take long. Maybe around 20 minutes. You're looking for color and to caramelize the glaze for the carrots.

These two pair very well with meatloaf, just like I have made here. 




You just have to give this dish a try one night for supper. Your oven will only have to be preheated once, and you can prepare and bake all at once. Easy, peasy, nutritious meal.
